Rice with Sweet Potato Shreds

In the past, when rice was expensive, the elderly added sweet potatoes to their rice as an alternative source of nutrition. The traditional rice with sweet potato shreds in Penghu is different from how we add fresh sweet potatoes to the rice today. Instead, the sweet potatoes were shredded and sundried before cooking, giving it a duller color. The grayish-white sweet potato shreds mixed with rice is quite distinctive.

Fried Cuttlefish Balls

Cuttlefish is a type of Penghu seafood. The common theory among locals regarding the origin of cuttlefish balls is that they came from a restaurant called "South East West" in the 1950s. The cuttlefish balls here are very different from in Taiwan. Each ball is filled with bits of cuttlefish.

Stir-fried Rice Noodle with Pumpkin

Stir-fried rice noodle with pumpkin is a traditional Penghu dish. It is said that in the Qing Dynasty, Ting Lan Cai, an official from Penghu who departed for a position in mainland China, developed a craving for Penghu dishes. The next day, his family prepared this dish to give him a taste of home. Fresh shrimp and squid are stir-fried together with shredded pumpkin and rice noodles. This dish is, much like to Cai, a reminder of home for all those from Penghu.

Squid Vermicelli

The small squid is one of the most popular seafoods in Penghu. Visitors to this area must experience night fishing for small squid and sampling squid vermicelli. The wide-ranging fame of the squid squid makes it a must-have delicacy for every visitor. The tender and appetizing squids are placed on the white and delicate noodles. With just an extra sprinkle of celery, the freshness of the ocean instantly melts into the mouth.

Liolophura (Tuoshibie) and Peanut Stew

Also know as the "sea steel helmet", Liolophura is a single-shelled shellfish found on the rocks in tidal zones. The creature is small, but its meat is rather chewy. In this dish, they are stewed with potato. There are numerous types of seafood, delicacies for us, but important sources of protein for our ancestors.

Stir-fried Cabbage with Ground Peanuts

Ground peanuts, called "Tudofu" in Chinese, is a variation of the dish by the poor. Peanuts are a famous produce of Penghu. Peanuts are rich in oil. Therefore it only requires a small amount of oil to stir-fry the ground peanuts before adding the cabbage in to produce a sweet and delicious dish. This also supplements the oil required by the human body.

Tuochu with Pork Rib Stew

Tuochu is a type of octopus. It is not a popular dish in Penghu when stir-fried, but once it is dried and braised in soy sauce with pork, it becomes an irresistable dish. Tuochu braised in soy sauce with fatty pork is a local Penghu delicacy. The best pork is used to make the stew. Before the stew is taken off the stove, garlic is added to enhance the richness of the broth, this is a local secret for stewing octopus and other seafood.
